Healthy Jaffa Cake

Cake Ingredients

  • 1 x Orange
  • 1/2 Cup Pitted Dates (soaked in hot water to soften)
  • 2 eggs
  • 25g Coconut Oil (melted)
  • 300g Self Raising Flour
  • 5 tbsp Cacao (can be more or less to make it less or more rich)
  • 150ml Almond Milk

Icing Ingredients

  • 1 x Orange Rind
  • 110g Lite Cream Cheese (room temperature so it’s soft)
  • Juice of 1/2 Lemon
  • Juice of 1/2 Orange

CAKE METHOD

  1. Grate the rind off the orange and set aside.
  2. Cut the same orange into quarters and place it with the dates into food processor and pulse until both ingredients are chopped very finely. (Make sue you have soaked the dates in hot water to soften & drain them before adding to mixer)
  3. Add all remaining ingredients to orange and date mixture (eggs, coconut oil, self raising flour, cacao & almond milk). Mix all ingredients using electric beaters for 5 minutes. Or until it is combined and a smooth consistency.
  4. Pour into greased and lined cake tin and bake for 25 min on 180 degrees or until cake is fully cooked in the middle.
  5. Let cake cool & prepare ingredients for icing.
    ICING METHOD
  6. Add the grated orange rind, juice of half a lemon , juice of half a orange and cream cheese into a mixing bowl and mix with hand beaters until a nice smooth texture is formed.
  7. Once cake is completely cooled it’s ready to ice. Cut into 12 servings and enjoy!
