Try our healthy version of a very traditional English recipe – Coronation Chicken.
The traditional recipe was made especially for the banquet that was held in honour of Queen Elizabeth II’s coronation in 1953.
This recipe uses less mayo and adds in the low fat creaminess of natural yoghurt.
This dish is also delicious as a topping on a jacket potato, or mixed with some cooked rice for a rice salad.

Ingredients:
  • 400g cooked and shredded chicken
  • 2 tbsp low fat mayonnaise
  • 3 tbsp natural yoghurt
  • 2 tbsp mango chutney (or any fruit chutney)
  • 2 tsp curry powder
  • 1 stick celery, finely chopped
  • 1 small cucumber, chopped
  • 1 apple, peeled, cored and finely chopped
  • 1 handful sultanas
  • 1 squeeze of lime juice
  • Salt and pepper to taste
Directions:
  • It couldn’t be easier – place all of the ingredients into a large bowl and bring together with a wooden spoon.
  • If you have time, chill in the fridge for an hour to allow the flavours to come together.  If, like me, you are hungry right now and don’t want to wait – it will still taste great.
