Here is a tasty healthy eating alternative to traditional banana bread that throws in an extra serve of veggies.
Perfect for morning or afternoon tea, the kids will also love this home baked healthy eating treat.
healthy_eatingThis loaf freezes well in individually wrapped slices once cooled, so you can just grab it and pop it in the microwave or toaster when hunger strikes. Or pop it in your bag in the morning to enjoy for afternoon tea.

Optional extras:

  • Add 2 tbsp cocoa or cacao to the batter
  • Sprinkle over 2 tbsp pumpkin seeds before baking
  • Stir through ¼ cup of crushed walnuts for extra crunch
  • Add a ¼ cup of chopped dates for more sweetness

Ingredients:

  • 1 cup of shredded or desiccated coconut
  • 1 tsp baking powder
  • 1 tsp bi carb soda
  • 1 tbsp cinnamon
  • 1 cup of almond butter (or use peanut, cashew or a mixture)
  • 2 ripe bananas, mashed
  • 2 eggs
  • 1 tbsp honey
  • ½ cup pureed pumpkin (or use leftover pumpkin mash)
  • Olive oil spray for the pan

Method:

  • Preheat your oven to 180C and spray a loaf tin with olive oil.
  • Place all of the ingredients into a large bowl.
  • Using a spatula, carefully bring the ingredients together.
  • Don’t overmix it or the loaf will come out tough.
  • Pour into the oiled tin and bake for 35-40 minutes or until a skewer inserted into the loaf comes out clean.
  • Allow the loaf to cool in the tin for 10 minutes before inverting onto a wire rack to cool.

Makes: 10 slices. Calories per slice: 258.
