Chocolate Raspberry Tarts

Ingredients – Raspberry Filling

  • ½ cup frozen raspberries
  • 1 tablespoon maple syrup
  • 1 tablespoon chia seeds
  • 1 tablespoon water

Method – Raspberry Filling

  • Add all ingredients to a small saucepan and place over a low heat.
  • Squish the raspberries with the back of your spatula and continuously stir.
  • Bring to a simmer then reduce heat and stir for 2-3 minutes until mixture has thickened.
  • Remove from heat and set aside to cool.

Ingredients – Chocolate Filling

Pure Harvest Coco2 coconut and cocoa spread.

Ingredients – Base

  • ¼ cup walnuts
  • ¾ cup oats
  • ¼ cup desiccated coconut
  • 2 tablespoons honey
  • 1 egg white – whisked
  • 1 tablespoon coconut oil – melted

Method – Base

  • Blitz walnuts, oats and coconut.
  • Add honey, whisked egg white and melted coconut oil.
  • Allow to cool slightly – it will make it easier to handle.
  • Once cooled, press into small silicon moulds or small patty cases. Press mixture up the sides as well as the base to form a cup.
  • Pop in the freezer to set.
  • Once set, fill half the cup with your raspberry mixture and the other half with the Coco2 mix.
  • Pop into fridge to set.
  • Keep stored in the fridge.

Recipe makes 12 serves, 116 calories per serve.
