healthy_eating_recipeThe ‘cream’ uses the ‘yoghurt cheese’ method of dehydrating natural Greek yoghurt overnight in cheesecloth or muslin suspended over a bowl to remove a lot of the moisture. This creates a thick and creamy texture that’s perfect for piping just like frosting or whipped cream- with a fraction of the calories. Greek yoghurt also contains tummy friendly probiotics, which are very beneficial for weight loss. If time is short, low fat cream cheese could be used instead, with only 1 tbsp. maple syrup required.
The other key technique for this dessert is using natural honey to make the ‘toffee’. This adds a lovely sweetness and texture without the need for sugar or condensed milk, which is the traditional method. This technique can be used to add a special touch to many different desserts and it only takes a few minutes! Just be aware that the toffee is best sprinkled on top just prior to serving, as it can stain the yoghurt and they won’t look quite as pretty.

Ingredients

  • ½ cup Greek natural yoghurt (**prepared the night before – see method for details)
  • 50g dark chocolate
  • 2 bananas, sliced approx. 1 – 1.5cm thick
  • 2tbsp. pure maple syrup
  • ¼ tsp pure vanilla extract
  • 2 tbsp. honey

Method

  • **The night before, place yoghurt in cheesecloth or muslin and suspend over a bowl to dehydrate overnight**
  • Preheat oven to 200°C. Place baking paper on a large baking tray, drizzle honey over the paper and bake for approx. 5 minutes until starting to golden and bubble. Remove and place aside to set.
  • Place chocolate in a bowl over a saucepan of hot water and stir well until melted.
  • Cover sliced bananas in chocolate and place on baking paper in the fridge to set.
  • Combine yoghurt, maple syrup and vanilla and place in piping bag.
  • Break ‘honey toffee’ into small squares. Stack two squares on top of each choc-banana, pipe yoghurt on top and decorate with crumbled ‘honey toffee’ just prior to serving.
