Looking for some healthy eating snack recipes whilst following the healthy eating meal plans from Lose Baby Weight? Then look no further than Eleanor Temple’s Choc Chia “Pro-Nuts”.
These are tasty, chocolatey bites that can be prepared in a donut tin or cupcake tin and are filled with healthy ingredients to give you protein and nutrients, including chia and banana.
Serves 10 – 100 Calories per serve
Ingredients
- 1/2 cup of Healthy Mummy Chocolate Smoothie powder
- 1/4 cup raw cacao powder or cocoa
- 1/4 cup coconut oil
- 1 large banana
- 4 tbsp chia seeds
- 8 tbsp coconut milk
- 3 tbsp coconut sugar
- 0.5 tbsp apple cider vinegar
- 2 tsp baking powder
- 1 tsp cinnamon
For icing
- natvia icing sugar
- raw cacao
- boiling water
Method
- Preheat oven to 180C.
- In a small bowl mix chia seeds and 6tbsp of coconut milk and set aside for a few minutes.
- Lightly grease a cupcake/donut tin with a tiny amount of coconut oil.
- In a large bowl mix Healthy Mummy smoothie mix, cacao powder, coconut oil, mashed banana, coconut sugar, apple cider vinegar, baking powder, chia seed/coconut mixture and cinnamon, mix together until well combined. Add extra coconut milk to achieve consistency.
- Divide the mixture evenly into the cupcake/donut tin and place in the oven for 15/20minutes. When baked, place on cooling rack.
- Mix icing mixture and add enough boiling water to reach a runny but not too thin consistency. Leave in fridge to set slightly.
- When donuts are cooled, apply icing mixture and leave to set.
