Ingredients: 

  • For the balls:
  • 30 fresh cherries, pitted, stems kept
  • 2 cups desiccated coconut
  • 5 tbsp coconut cream
  • 1/3 cup melted coconut oil
  • Dash of vanilla essence
  • Touch of natural red food dye
  • 1/4 cup rice malt syrup
  • For the outer chocolate fudge:
  • 1 cup cacao powder
  • 1/2 cup rice malt syrup
  • 1/3 cup coconut oil
  • Pinch of salt

Method

  • Blitz all ball ingredients in a food processor until combined. Add more coconut oil if the mixture is a bit dry.
  • Wet hands and roll into balls, chill in the refrigerator.
  • To make the outer chocolate fudge, mix the cacao, salt and rice malt into a thick paste, add the melted coconut oil and stir until the bowl is completely clean, and it’s thick and coming away from the sides.
  • Wrap the fudge around the chilled cherry balls with oiled hands. Add the stem and refrigerate until firm.
  • Makes: 30 small balls.
  • Calories per ball: 108.
