Bridget has created a delicious and healthy Berry, Chia & Coconut Muffin recipe with no added sugar and they’re also gluten-free (if you choose a gluten-free baking powder). Perfect to make for the kids’ lunch boxes or so you have a healthy snack on hand.

INGREDIENTS

  • 2/3 cup coconut meal
  • 2 teaspoons baking powder
  • 1 tbsp chia seeds
  • 2 tbsp Healthy Mummy Smoothie Strawberry powder
  • 2 eggs
  • 1 & 1/2 cups unsweetened coconut milk
  • 1/4 cup rice malt syrup
  • 1 & 1/2 cups frozen berries, defrosted

METHOD

  • Preheat oven to 180C. Lightly grease or line 12 holes of a muffin tray.
  • Beat eggs, rice malt syrup, Healthy Mummy Smoothie powder and coconut milk until well combined.
  • In a separate bowl combine coconut meal, baking powder and chia seeds.
  • Add wet ingredients to dry and mix well. Fold through berries.
  • Divide mixture into the muffin tray and bake for 30 – 40 minutes or until a skewer comes out clean when inserted into the centre of a muffin.

Makes 12 serves, 101 calories per serve.
