healthy_eatingIf you’ve got a full house it can be tough to decide what to serve for breakfast that fits in with your healthy eating plan and doesn’t require you standing over the stove for too long.
This delicious frittata fits the bill – and the best part is you can use up some of that leftover Christmas ham at the same time.
You can cook the whole thing the night before and then eat it cold on the go in the morning; mix everything together the night before and then bake it in the morning; or just throw it all together when you wake up and cook it – either way it will go down a treat.
Feel free to add anything to this dish – leftover roast veggies, some cooked rice or cous cous, odds and ends of cheese leftover from the night before, some other fresh herbs such as thyme or coriander, some chopped up olives or steamed asparagus – anything goes in this healthy eating recipe.
We have kept it simple with an egg, ham, cheese and tomato frittata but you can customise to your heart’s content.

Ingredients:

  • Olive oil spray
  • 8 eggs
  • ½ cup milk
  • 1 ½ cups chopped ham
  • 2 tomatoes, cut into chunks
  • ¼ cup fresh parsley leaves
  • ½ cup low fat cheddar, grated
  • Salt and pepper to taste

Method:

  • Heat your oven to 180C.
  • Spray a medium sized ovenproof casserole dish or baking tin with olive oil.
  • Whisk together the eggs and milk in a bowl, season to taste, then pour into the greased pan.
  • Throw in the ham, tomatoes and parsley and top with the grated cheese.
  • Cook for around 20 minutes or until a knife inserted into the centre comes out clean.

Serves: 6. Calories per serve: 192.
