Rice paper rolls

healthy_foodFill these with anything you’ve got to hand – avocado, grated carrot, spring onions, mint, bean sprouts, leftover roast chicken, strips of tofu. Anything goes – just don’t overstuff them or they will fall apart when you try to roll them up.

Wraps

healthy_eatingAgain just use what you have on hand and make it super tasty by adding sauce such as pesto, mayo or relish. We love the classic roast beef, tomato, avocado and baby spinach.

Tasting plate

healthy_eatingWho says dinner can’t be like a little tapas-style picnic? Make a plate of things that the family can nibble on – think corn on the cob, boiled egg, hummus, feta, avocado, rice crackers, and carrot sticks.

Bruschetta

healthy_foodIt might be the classic vegetarian version using tomato, onion, garlic and basil; or a combination of this with some cold meat such as thinly sliced turkey. Why not lay out a few options and let everyone make their own?

Tacos

healthy_eatingYou can use hard or soft tacos and fill them up with salad and protein – think a store bought roast chicken with coleslaw; tuna mayonnaise, grated carrot and baby spinach; or some defrosted leftover Bolognese from the freezer with some chopped tomato and cheese.
