When losing pregnancy weight it can be difficult to find recipes for easy, low calorie dessert options that the whole family will love.
While desserts probably shouldn’t be eaten every day of the week, desserts and treats can be included in your healthy eating plan every now and then.
This simple recipe for Baked Ricotta is made using only 5 ingredients, is super quick to prepare and has the added benefits of calcium, protein, fibre and antioxidants.

Ingredients:

  • 400 grams reduced-fat ricotta cheese
  • Third of a cup of honey
  • 1 teaspoon cinnamon
  • 20 fresh raspberries
  • A few mint leaves, for presentation

Optional Extras:

  • Instead of raspberries, use fresh strawberries or blueberries
  • Top with chopped macadamia nuts or slivered almonds instead of berries
  • Serve alongside stewed fruits like apples or pears

Method:

  • Preheat your oven to 170 degrees Celsius.
  • Place the ricotta in 4 small oven proof dishes.
  • Sprinkle the tops of the ricotta with the cinnamon, then pour the honey over the top.
  • Heat in the oven for 15-20 minutes, until the tops become light brown.
  • Remove from the oven and place 5 x raspberries on top of each ricotta dish, along with some mint for presentation.
  • Serve immediately.
