Method:

  • Get your frying pan hot and pop a slice of wholegrain bread into the toaster.
  • Mix up two eggs in a bowl with a fork.
  • Throw in a handful of baby spinach and stir again.
  • Add egg mix to the pan, stirring continuously with the whisk to help avoid lumps.
  • When the egg is cooked, remove from the heat.
  • Season to taste with salt and pepper and serve with the hot toast.
Breakfast Muffins or Bars

Are you one of those people that doesn’t feel hungry until a little later in the morning?
You might find that you can end up accidentally skipping breakfast as you don’t feel hungry first thing in the morning, and then you get caught up running errands or looking after the kids.
So why not prepare yourself some healthy muffins or fruit bars at the beginning of the week, and then pop one in your bag to eat mid morning?

Big Batch Porridge

Another great idea for a quick and easy breakfast is to make up a big batch of porridge/oatmeal/muesli at the beginning of the week. Store in the fridge and then heat up a portion each morning as you need it.
You can even add a scoop of smoothie mix for a boost of flavour and nutrients.
